Whole30 - Final Week

Week 4 = THE LAST WEEK!!!!! This week was awesome but I was also so ready to be done! I have learned so much from Whole30 and I am SO glad I finished. If you're still unsure about doing it, I say GO FOR IT. It wasn't easy but, so worth it. I lost 13 lbs guys.. 13! I not only lost weight but I feel incredible. My clothes fit better, my skin looks better and I feel better all around. Thank you all, so much, for following along and supporting me through this whole journey! Here we go: Week 4!






February 11 - 19


I will share my daily meal schedule with you first then recipes, then my grocery list.








I only made one new recipe this week but let me tell you: IT IS THE BEST. I think this may be my favorite thing (besides Trader Joe's sausage lol) that I ate on Whole30.


Creamy Spiced Cauliflower Soup


Aromatics:

1 Tbsp. olive or coconut oil

2 medium yellow onions, diced

1 bay leaf

1 1/4 tsp. ground cumin

1 tsp. kosher salt

1 tsp. ground turmeric

1/2 tsp. ground coriander

1/8 tsp. ground cardamom

dash of ground black pepper

sprinkling of crushed red pepper flakes

4 garlic cloves, minced


Sustenance:

4 1/2 cups vegetable broth

1 large head of cauliflower, roughly chopped to the same size

Conclusion:

1 cup canned coconut milk

1 Tbsp. apple cider vinegar

black pepper (for garnish)


In a large soup pot, heat the oil over medium-low. Add all the aromatic ingredients, except for the garlic. Saute, stirring occasionally until the onions become translucent, about 10 minutes. Then, add the garlic and saute another few minutes.


Add the sustenance ingredients and bring to a boil over high heat. Reduce to a simmer and allow to cook for about 15 minutes, until the cauliflower is tender.


Remove from heat and transfer carefully to a blender. Blend on high (allowing steam to vent) for a few minutes, until silky and smooth.


Transfer back to the soup pot and stir in the coconut milk and vinegar. Bring back to heat over low, ensuring it doesn't boil


Serve hot and topped with fresh dill and ground black pepper, if you like.



Sunday (Feb 11):

Breakfast - Eggs + Onions


Lunch - Sausage + Salad

I made a salad with cucumber + mixed greens, added the TJ sausage on top with Primal Kitchen Ranch


Dinner - Cauliflower Soup

Get use to seeing this because I basically ate this everyday all week. SO GOOD.


Monday ( Feb 12):

Breakfast - Eggs + Onions


Lunch - Cauliflower Soup


Dinner - Beef fajitas w/ Guac

Dad brought me dinner! Thanks TLit!!!



Tuesday (Feb 13)

Breakfast - Banana + Clementine


Lunch - Sausage + Sweet Potatoes


Dinner - Cauliflower Soup

all day errrrday yall. I had a side of cucumber with this too


Wednesday ( Feb 14)

Breakfast - RX Bar


Lunch - TJ Chicken Burger w/ Sweet potatoes

Side of Chipotle mayo


Dinner - VALENTINES

Date night with G and we made Steak! NOM NOM

Steak - salt + pepper + olive oil

Broccoli - salt + pepper + olive oil + red pepper flakes

Potatoes - boiled, then smashed and roasted with S+P and EVOO.

(I used this recipe)


Thursday ( Feb 15)

Breakfast - Eggs


Lunch - Chicken Patty

I ate this on top of lettuce and I cut up the patty so I could eat it with bites of salad and used the primal kitchen ranch again.


Dinner - Cauliflower Soup

I had a side of Sweet Potatoes (leftover from the other day)


Friday ( Feb 16 )

Breakfast - Clementine


Lunch - Sausage + Clementine


Dinner - Beef fajitas + avocado + sautéed onions

Saturday ( Feb 17 )

Breakfast - Banana


Lunch - Cauliflower Soup


Dinner - Salmon w/ Roasted Broccoli + salad w/ balsamic

Went out to eat


Sunday ( Feb 18 )

Breakfast - Banana + Grapes


Lunch - Egg + Onion

was getting low on groceries (lol)


Dinner - Baked Catfish + Broccoli

- I roasted the broccoli on 425 with EVOO + S&P for about 10 min.

- then took out the pan, pushed the broc to one side and put the fish on (seasoned with a little Slap Ya Mama) then put the pan back in for maybe.. 10 more min? Until the fish is flakey

Grocery List

All of these things can be changed and tailored to what you like and you plan. This weeks shopping list was much smaller (as I predicted in week 1's post) but here is what I bought. (the links to most of these grocery items are in posts 1 & 2)
